APPLE AND STRAWBERRY CRISP
YIELD: 8 SERVINGS
   
6 cups APPLES - PEELED AND SLICED
½ cup STRAWBERRIES
3 tbsp SUGAR
5 tsp FLOUR
2 tsp CINNAMON
 
TOPPING
   
1 cup ROLLED OATS
¼ cup BROWN SUGAR - PACKED
1 tsp CINNAMON
¼ cup SOFT MARGARINE

1) Combine apples, strawberries, sugar, flour and cinnamon.

2) Place in a 8” x 8” x 2” baking pan.

3) Combine topping ingredients and spread evenly over mixture.

4) Bake at 350F for 55mins or until fruit is tender.


JAMBALAYA
   
1½ oz Oil
1½ oz Crushed Garlic
1¼ lb Onion - Diced
½ lb Celery - Diced
¾ lb Green Peppers - Diced
3 oz Chicken Base
1½ tsp Basil
2¼ tsp Thyme
1½ tsp Black pepper
pinch Cayenne Pepper
pinch Chili Flakes
 
1) Heat a dutch oven over medium heat until hot.

2) Add all of the above ingredients and saute until the onion is slightly clear.

2 lb Sliced sausage
2 lb Diced chicken
¼ lb Shrimp
 
3) Add all of the above to the pot.

4) Stir occasionally until the shrimp and chicken are cooked.

 
2 cups Rice
 
5) Add the rice and stir until the rice is glossy.
 
50 oz Canned Tomatoes - Diced
½ L Vegetable Stock
 
6) Add the two ingredients above and simmer until the mixture slightly bubbles.

7) Cover with a lid and put into a 350F oven.

8) Cook for 45 minutes or until rice is tender.

9) Adjust seasoning as needed.


BBQ MEATLOAF
Makes about 7 x 3lb loaves
   
15 lb Hamburger - Ground
1 L Milk
½ ea Bread Loaves
2½ lb Onions - Fine Diced
¼ can Ketchup 100oz
2 tbsp Worchester Sauce
10 ea Eggs
1 cup BBQ Sauce
2 tbsp ea Basil, Thyme, Pepper, Salt
  Pam Spray

1) Mix hamburger in mixing bowl.

2) Dice bread, add all the above ingredients together with hamburger.

3) To check seasoning tase, cook a small hamburger, taste and adjust seasoning.

4) Spray pam in loaf pans.

5) Put 3lb of meat mixture into each loaf pan.

6) Cover with parchment paper and tin foil.

7) Bake in a 375F oven for 45 minutes or until internal meatloaf temperature is 160F-180F.

   
GLAZE
   
500 g Brown Sugar
2 cups Ketchup
1 cup BBQ Sauce
½ cup Dijon Mustard

8) Remove paper and foil.

9) Add glaze. Bake 10 more minutes.

10) Remove from oven and let rest 15 to 20 minutes before serving.

11) Gets about 10 slices per pan.

12) Serve with gravy or tomato sauce.

BBQ SAUCE
   
2 kg Brown Sugar
1 can Ketchup
1½ cups Regular Mustard
1 cup Soy Sauce
2 cups Balsamic Vinegar
½ cup Regular BBQ Sauce or Bullseye

1) Put all ingredients together in a pot. Bring to a boil.

2) Reduce heat to medium and let simmer 10 minutes while stirring constantly.

3) When sauce is cooled down, put into fridge.
